Sometimes cooking needs to be fast and convenient! I have used some of my families recipes along with my own to show you how to make healthy organic meals that are yummy, cost conscious and savable!
Grandma's veggie stew:
This stew/ soup is great because you can make it on a day that you are free but it will last you almost a week. AND it can be frozen to enjoy on those busy days that you want something filling and healthy!
Recipe 1:
5 organic potatoes
3 large organic carrots, chopped
3 organic celery stalks, chopped
half head of organic cauliflower
1 pd. organic turkey meat
2 cans of organic beans- cannellini & kidney
1 box of low sodium chicken stock
1 box of low sodium beef stock
Creme fresh
Pre-cook potatoes in the microwave for a quicker soup. Chop all veggies while your ground turkey is cooking in a skillet on the stove. Mix both stocks in a large soup/ sauce pan, heat on medium for 5 minutes. Add veggies to stock and turn heat up to medium/ high. Add beans last and turn up to high for 15 minutes to allow all the flavors to marry. Once all veggies are softened add some pepper two tbsp of creme fresh. This adds a little creaminess to the broth- it is delicious! At this point the soup is ready to eat but if you want to cook it longer that is fine. The longer it cooks the more the flavors get to mix- YUM!
This soup is fast, freezable, healthy and absolutely delicious!

Lasagna & Pasta Sauce
The Lasagna is healthy and delicious and the sauce is divine!!
Lasagna Recipe:
1 pd. ground turkey - Nature's promise is a great brand
100% whole wheat lasagna noodles
2organic green peppers
Light ricotta cheese
Nature's promise shredded mozz.
organic sauce ( jar or homemade)
Directions: Cook lasagna noodles first, allow them to be cooked for 10 minutes to al dente because they will cook more in the oven. Once they are cooked layer three on a oven safe baking dish. Layer ricotta, meat, peppers, mozz and sauce. Top the final layer with mozz and some sauce to keep it moist. Place aluminum foil over the top of the dish and bake in the oven for 25 minutes. Take off the foil and allow the top to bubble ( about 5-10 minutes). Let cool and ENJOY! This lasagna can be frozen to enjoy later as a quick, healthy and fast meal!
