Appetizers and Sides :-)
Brushcetta ( Med. style)
2 cups Organic Ricotta ( whole milk)
1 Organic tomato
1 cup of fresh organic basil
3 tbsp organic Olive oil
salt/ pepper ( about a pinch each)
Crispy Bread ( choose from your favorite style of organic bread)
Mix Ricotta with salt and pepper. Dice tomatoes up into small pieces and mix with ricotta. Slice bread into thin pieces, drizzle with olive oil and toast in the oven for 5-7 minutes. Once bread is cooled top with ricotta mixture. Add fresh basil on each piece- enjoy!



Quinoa Salad
1 organic tomato
1 cup organic quinoa
1/2 cup organic sharp cheddar
1/4 cup organic parsley
2 tbsp basil
1/2 cup cannellini beans
Boil 1 cup quinoa in 1 1/2 cups of water. Turn down to a low setting and simmer for 20-30 minutes or until the water is completely absorbed. Dice tomatoes, parsley and and add to quinoa once it is drained. Mix in cheese, salt and pepper ( to taste). Finally, add beans. Serve warm or room temperature. This meal is VERY healthy and delicious too.



Italian Crouton Salad
Organic Bread
Organic Olive oil
Organic lemons
Organic arugula
Organic grapes ( optional)
organic sharp cheddar or havarati
Cut bread into 1/2 inch cubes. Drizzel with o.o and toast in the oven for 5 minutes until golden brown. Zest 1 lemon and mix with the juice of 1/2 the lemon. Combine the lemon mix with 5 tbsp of olive oil. Add salt and pepper. Toss arugula, cheese, grapes and toasted croutons in homemade lemon zest dressing. Enjoy!
